What makes a “Library Wine”?

Our “library cabernet” vintages of our Cabernet Sauvignon, reserved by our Winemaker and stored in our private cellar to be re-released after its initial debut. Since wine consistently takes on new life as it ages and keeps changing in the bottle, the most notable changes occurring from the phenolic compounds that are naturally present. The most well-known refers to the wine’s tannins. Young tannins provide texture and structure to the wine. As wine ages the compounds form long chains – polymerization – developing into smoother and less astringent wines. Fortunati cabs are made to offer smoother tannins and highlight the fruit. As they age, they are truly noteworthy!
